Egg-in-a-Pepper

This is as equally fun to say as my “Egg-in-a-Hole” recipe, and it’s the same basic concept. EXCEPT, this one is bread-free, cooks just as quickly, and has a lot less steps. It is a great way to use those bell peppers that are starting to go soft, or if you have an overflow that you need to use.


Egg-in-a-pepper is an easy breakfast for one or brunch for a crowd. You can even make big batches for some for meal-prepping. Just reheat in the microwave for about 30 seconds Or, eat it cold. I don’t judge!

This dish is pretty versatile! Serve your egg-in-a-pepper alone, on top of toast, or as a side to other breakfast or lunch items or on a bed of spinach or arugula. Feel free to add as much or as little spice as you like, or leave it plain jane and use other sides to add your variety. It’s a simple but effective recipe that offers you lots of options.

Also, this is one of my favorite pre-workout breakfasts as it allows me to get some quality protein, easy-to-digest veggie carbs, and isn’t heavy. This is keto-friendly, paleo, and gluten free.


Ingredients:

  • 1 bell pepper, any color, seeded and sliced into about ¼ in rounds

  • 4-5 eggs, depending on how many rounds you get from your pepper

  • 1 tbsp paprika (optional)

  • Parmesan cheese, grated (optional)

  • 1 tbsp oil or ghee

  • Salt and pepper

Time: Approx. 10 min

Serves: 2-4 people, depending on portions and sides

Instructions:

  1. Preheat non-stick skillet to medium. Meanwhile, seed and slice your pepper, carefully, into 1/4 inch or so rounds. You want to try to get them as even and flat as possible, so use a really sharp knife and let it do the work. If you have a mandolin, use it, if you want to make quick work of it.

  2. Once your pan is heated, add your oil or ghee and swirl it around the bottom of the pan. If you are using oil, you don’t want it smoking, just shimmering. Ghee will be fully melted.

  3. Place your pepper flat in the pan, and gently pour your egg into the pepper. Sprinkle your paprika, if using, evenly over the peppers in the pan, and season with salt and pepper. Cover and let cook without touching for approx. 5 min, or until your egg whites are set and your yolk is at your desired consistency.

  4. Off the heat, remove the lid carefully.

  5. Sprinkle with cheese, if using. Serve with your desired sides, or on their own!

  6. See? Easy.
